Inflammatory Bowel Disease (IBD) severely impacts quality of life and is often managed through a restrictive low-FODMAP diet, which unfortunately eliminates many healthy foods rich in natural anti-inflammatory compounds called polyphenols. This project explores how reducing polyphenols might unintentionally worsen IBD symptoms, and investigates ways to balance dietary management with maintaining anti-inflammatory protection.
